Il est aussi possible de la travailler \u00e0 la main.<\/p>\n<p>&#8211; A l&rsquo;aide d&rsquo;un laminoir, \u00e9talez une bande de p\u00e2te le plus finement possible (environ 1\u00a0mm d\u2019\u00e9paisseur).<\/p>\n<p>&#8211; Ensuite, d\u00e9posez des points de cr\u00e8me tous les 2 cm au centre de la p\u00e2te.<\/p>\n<p>&#8211; Posez un escargot cuit au court bouillon sur chaque point, puis repliez le bas de la p\u00e2te en serrant bien.<\/p>\n<p>&#8211; Joindre la p\u00e2te entre chaque \u00e9l\u00e9ment de farce, la d\u00e9couper \u00e0 l&rsquo;aide d&rsquo;un coupe-p\u00e2te cannel\u00e9 de fa\u00e7on \u00e0 replier chaque raviole sur elle-m\u00eame. A d\u00e9faut du coupe-p\u00e2te, couper au couteau, cela marche aussi.<\/p>\n<p>Beurre noisette<\/p>\n<p>&#8211; Porter le beurre \u00e0 une coloration noisette, le saler. Incorporer les herbes finement hach\u00e9es.<\/p>\n<p>Cuisson<\/p>\n<p>&#8211; Pour la cuisson des raviole, porter une casserole d&rsquo;eau sal\u00e9e \u00e0 \u00e9bullition.<\/p>\n<p>&#8211; Y plonger les ravioles et les cuire 2\u00a0minute.
